Château coupe-roses

The vineyards of Coupe-Roses glint white in the Occitan sunshine from the decomposed limestone that dominates the soil. On this rocky plateau - at about 300m elevation, one of the highest in the AOP – garrigue, olives and vines thrive. The domaine is very much a family affair, founded by Françoise and Pascal Le Calvez in 2007 and now joined by son Mathias and daughter Sarah. Covering about 40 hectares of syrah, grenache and carignan, the vineyards are organic certified, and the elevation provides elegance and freshness in these classically styled wines.

Minervois ‘Bastide’

young, and fruit-forward, a wine for the moment. The perfect companion for culinary improvisations, its tannins, already softened and marbled with aromas of wild sloes. Its lively audacity will find its way into the simplest snacks as well as the generous dishes shared with friends. It is the wine with which we relive the allegorical feasts of bountiful harvests.
