Johannes Zillinger

‘For me, as a person and as a company, organic and biodynamic agriculture has always been a journey of ongoing development – a dynamic evolution as opposed to standing still.’ This is, in a nutshell, Zillinger’s philosophy. Born into art (his father was a pioneer of organic farming having converted the estate in the early 80s) Johannes is farming 20ha in the Weinviertel region and, using an open minded approach with different vinification methods, he crafts enticing wines of extreme purity, clarity and that are a joy to drink.

Grüner veltliner ‘reflexion K’

A very spicy, distinctive nose, The wine's great strength lies in its depth.emon balm, thyme, sage and mint. White pepper and a little cardamom are also added. Its fruit is subtle, albeit extremely important. Bergamot and kaffir lime stand out. Serious, appealing, honest.

Revolution White

Parcellaire Blanc #1

The Welschriesling is whole cluster fermented in qvevri amphoras on the skins then pressed and matured in 500 litre Oak barrels while the Chardonnay is pressed whole cluster and fermented aged in Acacia barrels for eight months under naturally occurring flor.

The wine is rich, clean, and unique fruit profile in the vein of white peach, yellow apple, yellow pear, and quince but with baking spice, fresh cream, pie shell, savoury herbs, and a distinctive salinity. The texture from the time on skins and the textured acidity create a fuller body than its gentle alcohol would imply. This wine is truly one of a kind.

Grüner Veltlilner ‘Numen’

this is a complex, firm and powerful wine that is clearly yeasty and has a correspondingly creamy texture. One might now fear that this would be accompanied by a certain heaviness and solidity. But far from it. The wine has an impressive liveliness and freshness, although the acidity is more ripe and fine than powerful. It is the minerality, the tart-spicy flavour and the slight saltiness that lend the Grüner Veltliner tension and liveliness.
