Chandon de Briailles

Run by the same family since its creation in 1834, the legendary Chandon de Briailles is located in the village of Savigny-les-Beaune, and it extends for 13 hectares over Savigny, Corton and Pernand-Vergelesses appellations. François & Claude de Nicolay, the brother and sister team in charge of the estate, converted to biodynamic farming in 2005, but her mother Nadine banned the use of pesticides and chemicals in general already in the mid 80s. The wine making is very classic: full-bunch fermentations for the red, a very judicious amount of new oak, and a very limited amount of sulphites (with many cuvées with no SO2 at all). The result is a collection of incredibly pure and energetic wines, precise and chiselled, that are a joy to drink young, but with an incredible ageing potential.

‘Île des Vergelesses’ blanc

magnificent ‘Île des Vergelesses’ climat, which means ‘the best of a whole’. The wine is matured in 10 hectolitre tuns and demi-muids for several wines for 20 to 30 months on the lees. Ripe pears, apples and quinces, citrus with zest, patisserie, smoky notes.

‘au fourneaux’

from parcels in the ‘Aux Fourneaux’ climat in the village appellation, at the bottom of the hillside, and a 1.31 hectare parcel in the same ‘Aux Fourneaux’ climat. Vinification is carried out without the use of pumps or sulphites, and the grapes are harvested whole, except in years of frost or hail. The wine is matured in Burgundy barrels for several wines, and 10% in new barrels in our old Cistercian cellars.

A very lively and aromatic style, but with old vines approaching seventy years old, which work their magic with excellent texture and intense tannins. More full-bodied and serious than the Aux Fournau from the same producer, but still charmingly elegant.

‘les lavières’

‘Les Lavières’, comes from the word lava, which here refers not to volcanic stone, but to the large slabs of hard limestone that were once used to cover the roofs of houses in the region. It is this limestone that gives the wine its strong minerality on the palate, a saline and therefore sapid feel on the finish and, above all, a magnificent floral bouquet on the nose.

‘les vergelesses’

A depth and complexity more reminiscent of a Grand Cru vineyard. It's no coincidence that the Premier Cru vineyard of Île des Vergelesses was historically a subject of debate regarding whether it should be classified as Grand Cru or Premier Cru in 1936 during the official classification of Burgundy vineyards. A majestic Burgundian terroir with concentrated fruit, freshness, minerality, and a wonderful tannic structure leading to impeccable balance. A quintessential example of the classic beauty of great Burgundy wines, a fragrant firework display, intensely harmonious yet perfectly measured. A unique work of art.
