Giovanni sallemi

Giovanni Sallemi, neurologist by trade, in 2015 decided to take over the winery where his father, and his grandfather before him, made wine using old traditional methods. To honour his heritage, Giovanni decided to use the same techniques: no chemicals in the vineyard or in the cellar, foot trodden grapes using the same old ‘palmento’ (an open concrete vat), a short maceration of 36 hours followed by a long ageing in very old oak 70hl casks. Old fashioned wines, traditional in the truest possible way, where elegance and rustic classicism are perfectly combined.
