Jean Dauvissat

Jean’s grandson, the young and extremely talented Fabien Dauvissat, since taking over in 2009 has changed dramatically the style of the estate, farming organically (some vineyards managed with biodynamic principles), hand harvesting, and vinifying with spontaneous fermentations and without any chemical additives. His wines are of extreme purity and finesse and, due to the long maturation of 18 to 24 months in vat before bottling, they are mature and a joy to drink.

Chablis

From parcels across the appellation, grapes undergo a long press, followed by malolactic fermentation and aging on the fine lees. Making for a rich chablis, with a perfect balance of minerality and fruit.

Chablis ‘bas de fourchaume’

chardonnay From plots on the lower hillside, below the fourchaume premier-cru. The grapes undergo full malolactic fermentation, and aging on the fine lees. An elegant and gentle profile of honeysuckle, and lemongrass marked by a finishing touch of saline.

Chablis ‘Mont-main sourdelle’

limited production wine made from grapes grown in two locations called ‘Mont-Main’ and ‘Sourdelle’. The vineyards are opposite the 1er Cru of ‘Vau de Vey’ in the town of Beines. full of texture, intense fruit and underlying minerality that makes them fresh, vibrant and wonderful from release.
